Gorgeous Granola

On the lookout for a deliciously healthy brekkie?

Look no further! My crunchy nut granola, is simple, fast and healthy all in one. The best part really is that it costs peanuts (lol) to make and it can be stored in a cool dry place for months (as long as you keep it air tight). Most supermarket options are extremely high in sugar so making it yourself cuts out the un-healthy middle man. Granola can be made up of as many ingredients as you like, but here I've kept it simple, so its full of flavour but as nutritious as possible. It's great for food on the go too. When you're in a rush to fly off to work, grab some yoghurt and top it with this crunchy character along with some honey and off you go.

Granola:

300g Wholegrain rolled oats
100g Almonds
100g Hazelnuts
50g Rasins (or any other dried fruit, cranberries or goji berries work very well)
3 tbsp Cinnamon
5 tbsp Honey
2tbsp Coconut Oil

Method:

Combine the oats, nuts and cranberries in a bowl along with the cinnamon. Mix in the honey and then the oil until the oats are well coated.

Transfer the mixture onto a lined baking tray.

Cook on a low heat (around 120 degrees) in the oven for 15 minutes. After the times up stir the oats then put back in the oven for a further 10 mins. The mixture should be nice and golden.

Leave the granola to cool completely and transfer into a air tight container. You can leave this mixture (all though i highly doubt it will be around for long) in the cupboard for up to six months.

Hopefully your mornings will now be easier and much much tastier!
