Protein Power Cookies in Association with Hi Pro*








These fellas are not only stupidly easy to make, they are packed with protein thanks to the added boost of Hi Pro's peanut butter. Hi Pro make nut butters that are perfect for a fitness fanatic like me who has a horrendously sweet tooth. When I want something sweet after my workouts I will be keeping a batch of these close by that for sure! With 33 percent protein in every serving, and no added salt, sugar or whey, Hi Pro is so versatile it can be added to anything from smoothies to toast toppings. It really is the nuts (not even sorry)!

Heres how to make these chocolate chip peanut butter cookies, packed with protein.
Makes 16


200g Hi Pro Smooth or Crunchy Protein Peanut Butter
175g Coconut Sugar
1 Large Egg (to make these vegan soak around 70g of flaxseed in 40ml of water and leave overnight, this serves as substitute to the egg)
50g Dark Chocolate Chunks

Mix the peanut butter and sugar in a bowl until combined, then gradually beat in the egg. Cream the mixture until a dough forms then add your chocolate chips.

Scoop out thumb size balls and roll them into little balls, place on a lined or greased baking tray and flatten slightly. Repeat, until all the mixture has gone.

Whack the cookies in the oven and cook for 15 mins until golden and soft. Leave to cool for a further ten minutes.

Once cooled demolish immediately, or alternatively if you have stronger will power than me store the cookies in an air tight container for up to five days.
