Hero Hummus
Oh My Lord.
Ever want to know what my Achilles heel is? Yep, Hummus. I can literally sit and scoff a whole tub in about ten minutes and I never, ever regret it. Since I'm so addicted I've decided to feed my habit by making my own batch. It's actually easier than I thought and tastes just as good as the shop bought stuff. Chickpeas really are a hero ingredient as they are packed full of flavour and nutrients. The recipe is also veggie and vegan friendly!
You will Need:
400g Canned Chickpeas
100ml Tahini
2 garlic cloves - crushed
Juice of a lemon
Pinch salt and pepper
2 Tbsp Extra Virgin Olive Oil
1 Tsp Cumin (optional)
1 Tsp Chlli Flakes (Optional)
Method:
Drain the chickpeas and add to a food processor along with all the other ingredients apart from the olive oil and blend until well combined.
Add the oil and stir through the mixture, now taste. Add more seasoning if needed or a touch more lemon juice.
Serve in a bowl with carrot sticks or a doughy flatbread. You can even choose to serve with some freshly ground chilli flakes and a wedge of lemon for an extra kick.
Transfer the remaining mix to an air tight container and leave in the fridge for up to three days.
