Lemondrop Shortbread










I've been a bit complacent with the baking recently so I haven't had the chance to post for a while! But no fear I've had some spare time to rustle up something sweet for all you lovely people out there.

Shortbread is so incredibly versatile with its flavouring. You can pretty much add anything to a basic shortbread mix to make your own personal, tasty creation. One of the best flavourings I like to use is lemon. The tangy, zesty flavour cuts right through the sugary sweetness of the biscuit, which makes them ridiculously mourish. You don't need a hell of a lot of juice from the lemon to make them just so, and they don't take too long either. You'll have perfectly light shortbread in no time, ideal with a nice cuppa on a sunny morning.



Lemondrop Shortbread

180g flour
60g sugar
125g butter
Zest of a lemon
and the juice of half a lemon


Cream together the butter and the sugar, then gradually add the flour.

With your hands rub the flour and the butter until the mixture resembles fine breadcrumbs.

Add the zest and juice of the lemon and kneed the mixture into a ball.

Flour a work surface and roll the dough to about 1 cm thick. Cut into the desired shape and add to a baking tray.

Bake in the oven for 15 mins until firm and slightly golden.
