Dairy, Gluten and Sugar Free* Raspberry Flapjacks
Too good to be true right? When I say sugar free I mean these are free from the yucky refined sugars that are normally hidden in the treats you buy in the supermarket. We're all partial to something a little sweet every now and again, but I don't see why enjoying something tasty should harbour anything that could be bad for your health. Using the sugars that occur naturally in fruit and some syrups are just as effective as the packet stuff. These are perfectly good on their own but adding fruit or some dark chocolate chips from time to time makes them that much more delicious.
You will Need:
200g Oats
200g Ground Almonds
120ml Maple Syrup
3 Generous Tbsp Coconut Oil
100g Rasberries (or 100g of anything else you fancy like raisins, nuts or chocolate chips)
1Tsp Cinnamon
Method:
Line a 8x8 baking tray (or similar, as long as its quite deep) with parchment.
In a saucepan heat the coconut oil, maple syrup and cinnamon until well combined. Reduce the heat right down and add the almonds and oats. If you feel like the mixture is a bit too dry for your liking add a dash more maple syrup or coconut oil.
Remove the pan from the heat and transfer the mixture into a mixing bowl. Once cooled slightly add the raspberries and mix well.
Transfer you're flapjack mixture into the baking tray and pat down until level. Bake in the oven for 12-15 minutes until the surface of your flapjacks have gone a nice golden brown.
Remove from the oven and place on a wire rack to cool. Cut into the desired amount of squares and demolish.
