Pecan Pie Energy Balls
Are you in need of a boost?
It's frigging freezing outside and sometimes you can find it hard to assemble the energy to get yourself out of bed in the morning. After a coffee you're feeling okay but around the corner is the dreaded 4pm slump. You've had lunch and now all you can think about is getting the hell out of work and getting home. But the afternoons shouldn't leave you feeling groggy. Nor should the mornings for that matter, so heres the perfect solution for you.
Pecan pie energy balls! These bites are packed with goodness to help fuel you through the day. They're a real energiser as they contain goji berries and prunes which are a both low in GI and teeming with natural sugars. You only need a hit from one of these little powerhouses to keep you going through till dinner. They also work as a great pre or post workout snack. You can add half a cup of protein powder or even oats to the recipe to make them a little bit more gain friendly.
Pecan Pie Energy Balls:
1 Cup Prunes or Dates (Prunes are slightly sweeter)
1/4 Cup of Dried Goji Berries
1/4 Cup Cacao Nibs
1 Cup of Pecans
1 tsp Pure Maple Syrup or Coconut Oil
1/2 tsp Cinnamon
(All ingredients were sourced from Tesco)
Blend all the above ingredients in a food processor until well combined.
Using your hands roll out 10 balls and place them on a lined baking tray. The balls should be about the size of a 50p piece in diameter, but you can make them bigger or smaller depending on the volume of balls you want to make.
Place the balls in the fridge to set for 1 hour. Remove from the fridge and store in a dry cool place, in an air tight container, for up to two weeks. (You'll be lucky if they last two days if i'm around).
