Peanut Butter Banana Bread






Yes, I know what you are all thinking, I have a problem. A problem with Peanut Butter! It's my favourite thing in the world and baking with it makes me so so, so happy. This old classic has had a bit of a change up from me. It's got no butter in it, instead I've used a generous helping of peanut butter to add a little twist, it balances out the sweetness of the banana perfectly. I must say it turned out very well and would be made even better with the addition of chocolate or some whole nuts for that extra crunch. The best way to enjoy this loaf would be to toast a thick slice under the grill then slathering it in more peanut butter and topping it with strawberries. H-E-A-V-E-N

Peanut Butter Banana Bread 

4 Overly ripe bananas
2 cups Self Raising Flour
1 cup of Golden Caster Sugar
2 Tbsp Honey
2 Tbsp Peanut Butter
2 Eggs

Method

Pre-heat your oven to 150 degrees, then grease and line a loaf tin.

Mash the bananas in a bowl until a liquid like mixture has formed then add the sugar. Mix well until combined.

Gradually beat the eggs into your banana mixture. Don't worry if it is very runny it will thicken soon!

Sift in the flour and combine, then add in your peanut butter and honey. Combine well until everything is mixed in and you have a cake like batter.

Transfer to a lined loaf tin and bake in the oven for 50 mins.

Remove from the oven and cool. Slice and top with some more peanut butter and/or some fresh fruit.

You will literally go Bananas for this!
