Egg 'Fried' Quinoa





It's apparently the most depressing day of the entire year, and of course it's absolutely chucking it down outside. Dreary, grey and just awful. A little something was needed to soothe my hangry soul. Something warming, quick, easy and extremely healthy. Looking at the fridge and cupboard was equally as depressing but luckily staple goods were fully stocked. Eggs are always a life saver when there's literally nothing to eat. Quinoa acts like rice in this recipe, personally not only do I think it's better because of health reasons but taste wise, it absorbs all the flavours so much better than say brown or basmati rice. You can use any type of pulses or grains, like Fekkeh or Pearl Barley if you don't have quinoa, they work equally as well. Whats more this meal is very light on the pocket and will serve as a great lunch or equally as amazing dinner. You could even add meat or fish if you wanted too.

Egg Fried Quinoa

1 Tsp Coconut oil
2 Free-range eggs - beaten
200g cooked quinoa
1 Clove of Garlic- chopped or crushed
1 Tbsp Low salt/sodium soy sauce
1 Tsp Fish sauce (optional)
70g Frozen Peas
Half can of chickpeas (about 50g, drained and washed)


In a pan, fry off the garlic and ginger in coconut oil, over a medium heat until aromas are released.

Add the chickpeas, frozen peas and quinoa and stir well. Leave to fry for about a minute, then add the soy and fish sauce. Taste and add some pepper if required.

Push the quinoa and veg mix to one side of the pan and add your eggs. cook for 30 seconds then mix all the ingredients together, the eggs should scramble well within the mixture.

Cook for a further minute over a medium heat. Remove from the pan and top with some chilli or more soy sauce (Siracha works a treat here).
