Peanut Butter and Oat Cookies - No Bake
These are so stress free its unreal. All you need is three ingredients, whacked in a bowl and plonked in the fridge. Yep you don't even have to bake these beauties and the ingredients can be easily modified to suit your tastes. These peanut butter cookies can also be formed into bars, and they are one hundred percent vegan (if you choose to use chocolate chips choose a dairy free option). All you need is ten minutes and a hunkering for some sweetness!
Peanut Butter Oat Cookies
1 1/2 cups Wholemeal rolled oats
1/2 cup Smooth peanut butter (I used Pip and Nut)
1/2 cup Agave Syrup (Any other syrups will do, maple/honey etc)
Chocolate chips/sultanas/rasins (optional)

Method
Line a baking tray with grease proof paper and set aside.
In a mixing bowl, add the rolled oats and set aside.
In a microwave safe bowl, melt the peanut butter with the agave syrup until combined.
Pour the liquid mixture into the dry and mix well until fully incorporated.
Using your hands, form into small balls and place on the lined tray. Press each ball into a cookie shape and if desired, top with chocolate chips or fruit etc and then refrigerate for at least 30 minutes until firm.
Note: If you are making these in bar form, simply press the mixture into a lined brownie tin, once refrigerated cut into the desired amount of bars.
