Blueberry Porridge Breakfast Bars
Well I don't know about you but I'm a sucker for blueberry porridge in the mornings, but nine times out of ten I don't have time to make it before I'm up and out for uni, which is a right pain in the oat (sorry). I was searching for ideas so that I could eat it on the go without having to lug a tub of porridge and then find a way of heating it up. So here is an extremely simple solution porridge oat bars! Simply bake, cool, cut and store. Take them whenever you want, where ever you want! Win.
Blueberry Porridge Bars
260 g blueberries
200ml hazelnut milk (or any dairy alternative works just as well)
130ml maple syrup
100ml honey
300 g wholegrain oats (or instant whatever you have)
Method:
Grease and line a baking tray and pre-heat the oven to 180 degrees c.
Place all ingredients into a food processor and blend until combined but keep it slightly chunky. If you don't have a food processor just mix extremely well with a wooden spoon until the blueberries are slightly crushed.
Transfer to you're tray or tin and bake for 20mins until golden brown. Wait to cool and cut into squares.
If you're feeling extra special sprinkle over some brown sugar or cinnamon.
