Dark Chocolate, Cranberry & Pistachio Bark
Simple, moorish and ridiculously easy, this chocolate bark will feed those sweet cravings, leaving the guilt behind!
This is my new favourite way to indulge when I want something rich and satisfying. Since its made with dark chocolate solids, it's much better for you than standard milk chocolate and it tastes absolutely incredible. The saltiness of the pistachios and bittersweet twang of the cranberries are a match made in chocolate heaven. And the best thing? It takes about 5 minutes to make and is very easy on the wallet.

You will need:
200g - 75% dark chocolate (the higher the percentage the richer and better the chocolate)
60g - Dried Cranberries
60g - Chopped Pistachios
Pinch Of Course Sea Salt (optional)
Method
Line a baking tray with baking parchment and set aside.
Place a bowl over a saucepan filled with water and bring to the boil. Break up the chocolate and transfer to the heated bowl, stir gradually until all the chocolate has melted. Remove from the heat and set aside.
Roughly chop the pistachios and cranberries and transfer into the melted chocolate, keeping a few back for the top. Once everything is well combined pour the chocolate mix onto the baking tray and spread evenly. Top the mixture with the remaining nuts and berries and place in the freezer for 15 minutes.
Remove from the freezer and break apart with the end of a knife handle or wooden spoon. Try not to eat the whole lot all in one go and store the rest in the fridge for a rainy day!
